Sesame Oil is the right choice

Pickle making is a process of preserving vegetables by anaerobic fermentation in brine (salt and water). The salt and water solution encourages the growth of beneficial bacteria and makes the pickle probiotic in nature.
The key ingredient for preparing pickle is edibe oil.
The quality of the pickle depends on the quality of the oil.
Sesame oil is considered as a number one oil for preparing pickles.
Idhayam sesame oil is unrefined, filtered oil so it contributes a unique taste and flavour to the pickles.
Sesame oil contains sesamol and sesamin which acts as a natural preservative. It prevents the pickle from becoming rancid with unpleasant smell and taste as a result of decomposition of vegetables. This oil is mostly used as it is a stable vegetable oil with long shelf life.
Cucumber was first pickled 4,500 years ago in Mesopotamia as they were low in calories, have no fat and had probiotic benefits. Later on, many vegetables like mangoes, lime, gooseberries, ginger, garlic, tomatoes, some mixed vegetables like beetroot, carrot, bitter gourd, chillies, beans, brinjals, onions etc., and even fish, prawns and meat are used for making pickles.
In India,Mango Season Is Consider as a Pickle Season
Mangoes are cultivated all over India especially in Andhra Pradesh, Chhattisgarh, Gujarat, Haryana, Jammu & Kashmir, Jharkhand, Karnataka, Kerala, Madhya Pradesh, Maharashtra, Orissa, Punjab, Tamil Nadu and Uttaranchal.

Season of Harvesting Mangoes
Andhra Pradesh: 15th April to 15th June. Some late varieties of mangoes are harvested from 15th may to 15th July.
Gujarat: Beginning of April to Middle of June
Jharkhand: May to July (sometimes up to early August)
Karnataka: Mid April to Mid July
Kerala: January to May or June
Maharashtra: February to 10th June
Orissa: Mid March to June
Uttar Pradesh: May to August
Tamil Nadu: Main season - April to July; off season - November to January.
In Andhra Pradesh, people make mango pickle every summer i.e., from middle of April to middle of June as it is the season for abundant availability of variety of mangoes. They make pickles which can be preserved for a year. Preferred choice of oil for making pickle is Idhayam sesame oil.
