A controlled human study conducted at the Penn State University found the health benefits of peanut oil on blood lipids and the heart.
The subjects were put on one of the following diets:
•    Moderate fat - 1/2 fat from peanut oil
•    Moderate fat - 1/2 fat from olive oil
•    Moderate fat - 1/2 fat from peanuts and peanut butter
•    Low-fat Step II diet (American Heart Association/National Cholesterol Education Program)
•    Average American diet (AAD)
A controlled human study conducted at the Penn State University found the health benefits of peanut oil on blood lipids and the heart. The subjects were put on one of the following diets: (1) moderate fat - 1/2 fat from peanut oil, (2) moderate fat - 1/2 fat from olive oil, (3) moderate fat - 1/2 fat from peanuts and peanut butter, (4) low-fat Step II diet (American Heart Association/National Cholesterol Education Program) and (5) average American diet (AAD).
The findings showed that peanut oil and peanut and peanut butter diets significantly improved total and "bad" LDL cholesterol levels just as olive oil did, when compared to the average American diet. Risk of cardiovascular disease was also reduced by the peanut oil and peanuts and peanut butter diets, just as with the olive oil diet.
Another human study used weight loss to measure those on a moderate fat diet versus a low-fat diet. Peanut oil was used for half of the fat in the moderate fat diet. It was found that the subjects on the peanut oil diet lost weight, besides having improved cholesterol and triglyceride levels.
Type 2 diabetes is another area where data has shown the benefits of healthy fats. When saturated fat is replaced with unsaturated fats, similar to that found in peanut oil, insulin sensitivity is improved.
